This month in M3 (Mercato’s Meatball of the Month), they took a classic Italian dish and turned it into a ball. They went with a veal marsala ball – and I decided to put it over spätzle, as suggested by my waiter.
This was a good take on the dish – the ball itself had a delicious flavor and would be great with any sauce (the mushroom gravy they paired it with really did the trick, though). The sauce was a lighter gravy but packed a hefty, deep flavor that went really well with the spätzle as well. Big improvement from last month – I can’t wait to see what the May balls will be!
