Pizza Parma

Before I report the best pizza in PGH, I’m going to lay down the ground rules:

  • The review is of one plain, cheese slice.

That’s it. No full pie, no toppings, no special requests. Gotta eat the singular slice as prepared by the pizzeria, no more, no less. Having that formality out of the way, let’s get to the main attraction. The first ever TGI🍕F review is of…*drum roll please*…

Now in the interest of transparency,  I have to admit I have frequented this pizzeria before. I am accustomed to eating a decent slice on a rather consistent basis from this place. But alas, I needed a fresh slice to conduct a proper review, and headed Downtown to see what Pizza Parma was serving up.

The GOOD: Pizza Parma’s sauce never lets me down. It is very light, yet packs a punch of flavor that is on the sweeter side of the spectrum. The sauce really stands out as the star performer for Pizza Parma.

The BAD: Cheese. There isn’t much to say about the cheese except that it was ho-hum. While the cheese didn’t take anything away from Pizza Parma’s pie, it didn’t add anything either, and was overshadowed by the powerful sweetness of the sauce. Pizza Parma, do more with your mozz.

The UGLY: It is a universally known fact you can’t have a good pizza without good dough. It is the foundation upon which everything is built. Put simply, Pizza Parma has a weak foundation. I don’t want to go as far as saying it has cardboard-like quality, but they definitely weren’t baking pizza on Mancini’s dough either.

Overall, Pizza Parma, usually a pizzeria on which one can rely, delivered a slightly sub-par slice for today. Here’s hoping to better pie next time I stop by their shop!
