With the warm weather coming through every now and then, I needed something fresh for dinner. I’m always a big fan of lettuce wraps since theres basically no carbs and you can put whatever you want in them – it’s like a healthy burrito.

  1. Preheat the oven to 400F. Sear both sides of the chicken in a skillet with olive oil, salt, pepper & 1/2 lime’s juice. Place thinly sliced lime pieces on chicken and ransfer to oven until cooked thoroughly (~15-20 mins)
  2. Dice all the ingredients for the salsa (pineapple, tomatoes, onion, cilantro, garlic, avocado & jalapeno). Combine them, then squeeze the remaining 1/2 lime into the salsa
  3. Heat up the corn, clean the lettuce, cut the chicken into strips, and enjoy!
