With the warm weather coming through every now and then, I needed something fresh for dinner. I’m always a big fan of lettuce wraps since theres basically no carbs and you can put whatever you want in them – it’s like a healthy burrito.
What you’ll need for 5-6 servings:
- 1.5lbs chicken breast
- 1 lime
- Bib lettuce (or whatever you prefer)
- 1 can corn (no sodium)
- Pineapple
- 3 plum tomatoes
- 1/3 red onion
- Cilantro
- 4 cloves garlic
- 1 avocado
- 1 jalapeno (optional)
- 1 tbsp olive oil
- Salt & pepper
- Preheat the oven to 400F. Sear both sides of the chicken in a skillet with olive oil, salt, pepper & 1/2 lime’s juice. Place thinly sliced lime pieces on chicken and ransfer to oven until cooked thoroughly (~15-20 mins)
- Dice all the ingredients for the salsa (pineapple, tomatoes, onion, cilantro, garlic, avocado & jalapeno). Combine them, then squeeze the remaining 1/2 lime into the salsa
- Heat up the corn, clean the lettuce, cut the chicken into strips, and enjoy!
This one is so simple, fresh, and really gets you in the mood for warmer weather. I hope you get the chance to try this and some of my other recipes!
